3 Authentic Mediterranean Food Recipe 2021

1. Tortilla EspaƱola

One of the most authentic of culinary of the Mediterranean is the Tortilla, which can also be enjoyed with fresh-baked bread. This food is truly authentic and deserves to be called "rustic."

Ingredients

-Potatoes, peeled and sliced into ¼ inch rounds (4 piece)

-Extra virgin olive oil (¾ cup)

-Onion, sliced in rounds (1)

-Eggs (10)

-Salt and pepper, to taste

Recipe

Cast iron skillet with olive oil and heat the oil in a saucepan; add the potato slices. You should oil each of them thoroughly. Add onions to potatoes a few minutes after they have been fried. Serve with pepper and salt. The potatoes should remain tender until the whole thing has been fried. Whisk the eggs until smooth in a large bowl. Set oven's broiler to high. In a bowl, add the potatoes, onion, and oil that were removed from the pan. Meanwhile, clean the skillet and let it cool. The sides and bottom of the skillet should be well covered with oil, the potatoes and onions. Then, add the potato mixture to the egg mixture. Stir well. Add about ¼ teaspoon of ground black pepper and salt. It is replacing eggs and potatoes in the skillet with grease. On medium heat, cook eggs until they begin to set. Now turn on the oven and place the skillet on the top shelf then cook the egg until it is set. To check whether the middle is cooked, use a knife. If not, continue baking at 350 degrees F for a few more minutes.

2. Tabouli (Lebanese Bulgur and Parsley Salad)

One of the best mezes around is tabouli. Summer doesn't get better than this when it comes to healthy, light foods. The dark green color is mostly due to fresh parsley. In this recipe, whole wheat bulgur is used.

Ingredients

-1/2 cup bulgur wheat (fine)

-1 bunch of curly parsley, de-stemmed

-1 bunch of scallions, sliced thinly

-1 bunch mint, de-stemmed

-3 medium tomatoes, diced

-Juice of 1 lemon

-1/3 cup extra virgin olive oil

-Salt and pepper, to taste

Recipe

Take bulgur and wash it. Combine bulgur with a cup of hot water. Twenty minutes of soaking is sufficient. Chop herbs finely. Squeeze bulgur in a colander after draining (1st). Chop vegetables and herbs and add bulgur to them. Blend in olive oil and lemon juice, depending on how salty or peppery you like your food.

3. Humus

Hummus is a chunk of the Mediterranean diet made with extra virgin olive oil, not canola oil, unlike most hummus found in stores.

Ingredients

-2 -15 oz cans chickpeas, drained and rinsed

-2 garlic cloves, crushed

-1/4 cup tahini paste

-1/3 cup freshly squeezed lemon juice

-1/4 cup extra virgin olive oil

-1/4 tsp paprika

-1/2 tsp salt

-3 tbsp cold water

-pine nuts for garnish (optional

Recipe

In a food processor, chop the garlic. Blend the remaining ingredients until the desired consistency is reached in the food processor. To make the mixture smoother, add cold water. It is the best Hummus in San Diego.
